I love nachos. Like when it comes to my favourite meals, nachos would definitely be right up there for me! And these easy chicken nachos are so simple to make. They are also super affordable, coming in at under $10 for 4 serves, and are actually really healthy and high in protein. I like to add carrot into my nachos to help pad them out a bit, and to also include a vegetable just to make them feel that wee bit healthier! Carrot is also a winner with kids, so it’s an easy way to get a veggie into them, hidden in all the nacho-y goodness! In this recipe I’m also using chickpeas and I love the chicken/chickpeas combo, although if you’re not a fan of these you could always swap them out for pinto beans, kidney beans, or even chilli beans if you like a bit of spice.
This is definitely a non-spicy nacho option, as my family and I really aren’t huge spice lovers. Of course, you can easily add a dash of chilli or a few chopped jalapeños if you are keen for a bit more of a kick!
What you’ll need….
- 1 large onion
- 2 medium carrots
- 2 teaspoons of crushed garlic (or 2 cloves)
- Salt & pepper to taste
- 1 teaspoon of oregano
- 1 teaspoon of Tuscan seasoning
- 1 teaspoon of Barbecue seasoning
- 1 tin of chopped and sieved tomatoes
- 1 tin chickpeas
- 500 grams of cooked chicken, shredded
- Olive oil
- Wraps (1 per person)
How to make easy chicken nachos….
- Dice onion and carrot finely and place in a pot with 1 tablespoon of olive oil
- Cook until carrot starts to soften and onion goes translucent
- Add in the garlic, oregano, Tuscan seasoning, and barbecue seasoning
- Drain and rinse chickpeas, and add into the pot along with the tinned tomatoes
- Shred the chicken and add into the nacho mix
- Cook for approximately 20 minutes (you might need to add a little water while this cooks)
- Add salt and pepper to taste
- Cut the wraps into 8 pieces and paint both sides with olive oil
- Lay on a baking tray, and place in the oven on fan bake 180 degrees Celsius for approx 8 minutes
- Turn and then cook the other side around 6-8 minutes
- Serve the chips and nacho mix and garnish with grated cheese, sour cream or any other topping of your choice!
This is honestly such an easy chicken nachos recipe! Just make sure you keep an eye on the chips while they are cooking as they go from not cooked to cooked super quick! I’ve managed to burn these a couple of times when I got distracted 😣 Alternatively, if you don’t want to make your own chips, just grab some regular nacho chips and you are good to go!
