Vegetarian Nachos with Homemade Chips

In our family we love nachos, and I could literally eat them everyday! We are trying to reduce our meat consumption and have a few more vegetarian nights, so I came up with a recipe for vegetarian nachos. This is literally the simplest recipe ever – you just throw it in a pot and let it cook! I’m all for recipes like this so I figured I might as well share! This recipe is super healthy and cheap to make too and kids would totally love it!

While you can just pop this on top of some store bought nacho chips, I prefer to make our own as I think they taste way nicer! I’ve included my recipe for the ultimate nacho chip too, and they are also super simple!

Vegetarian Nachos with Homemade Chips

What you’ll need…

  • 2 large cloves of garlic (crushed)
  • 1 large onion
  • 2 medium carrots
  • 1 bell pepper
  • Olive oil
  • 1 can Watties crushed & sieved tomatoes
  • 1 can Watties Chilli Beans
  • 2 large plain white wraps
  • Salt & pepper to taste

To make the Vegetarian Nachos Mix…

  1. Dice garlic onion, pepper and carrots and add to pot with a little olive oil
  2. Cook for about 6-7 minutes or until veggies start to soften and onion starts to go translucent
  3. Add crushed and sieved tomatoes and chilli beans
  4. Add salt and pepper to taste
  5. Cook for 40 minutes on low or until carrot is soft

 

Vegetarian Nachos with Homemade Chips

To make Homemade Nacho Chips…

  1. Cut wraps into 8 sections
  2. Paint olive oil on to both sides
  3. Cook on 180 for 7-8 minutes and flip
  4. Cook until brown and crispy
  5. Crack a generous amount of salt over the top and serve!

Your choice of toppings. Some options are…

  • Salsa
  • Melted cheese
  • Sour cream
  • Guacamole

This nacho mix recipe serves four, so Jack and I get two nights plus a lunch out of this one! You will just need to make up a fresh batch of chips and you are good to go! This recipe comes in at under $10 for four serves.
