Vegetarian Spaghetti Bolognese

As you guys know, I love to cook, and even more so I love to create meals from scratch. I’m also still really enjoying cooking vegetarian meals and coming up with fun and tasty vegetarian recipes. One thing I’ve made recently is this vegetarian spaghetti bolognese recipe. At first look, it totally looks like regular bolognese as the lentils really give the appearance of meat!

This meal is packed with protein. Lentils are SO good for you and full of protein to fill you up and keep you full for longer, plus they are fab if you are someone who likes to work out. This meal also includes quite a few veggies, so it’s a good all rounder and super healthy. I’ve also found this meal is toddler approved! Jack seems to really love this one, and doesn’t mind one bit that there’s lentils in it as it’s quite tomato-y (which is a must for toddlers really!)

This meal also reheats well and freezes well, so you can even make up a double batch of this and freeze it for another night! It’s also super cheap to make as lentils go a long way. Since you can mix and match what veggies you put into this, you can always use whats in season, as well as a mix of fresh and frozen veggies – all which help to keep the price per serve down!

Vegetarian Spaghetti Bolognese recipe

INGREDIENTS

  • 1 large carrot
  • 1 small capsicum
  • 1 onion
  • 1 cup of lentils
  • 1 tin of crushed & sieved tomatoes
  • 2 teaspoons of crushed garlic
  • Oregano + other herbs to season
  • Salt & pepper
  • All purpose/barbeque seasoning
  • Olive oil
  • Salt & pepper to taste
  • 1/2 packet of dried spaghetti

 

METHOD

  1. Wash lentils and place into a pot with water and bring to the boil.
  2. Boil for around 30 minutes or until starting to go soft. Keep on the boil while you prep the veggies
  3. Finely dice onion and carrot and place into pot with olive oil and garlic and cook until carrot starts to soften.
  4. Dice the capsicum and add into veggie mix, along with tinned tomatoes, oregano, and salt and pepper
  5. Drain lentils and mix into the tomato and vegetable mix. Add seasoning and salt & pepper to taste.
  6. Cook dried spaghetti according to packet instructions. Pop a teaspoon of oil into the water to ensure the pasta doesn’t stick.
  7. Drain and serve pasta and place bolognese mix on top. Serve with grated cheese if you wish
  8. Enjoy!
