Salmon Fish Cakes Recipe

If there’s one thing I love, it’s salmon. And these salmon fish cakes are so so easy to whip up for an affordable and healthy dinner! They literally take no more than 10 minutes to make, and then only 20 minutes to cook and you have a delicious crisp on the outside, soft on the inside, fish cake!

You could make these with fresh salmon, but I find tinned salmon is just so much easier – just make sure you get out all of the bones! Of course you could also make these with tuna too. Using tinned fish is an affordable way to get essential Omega-3s into your diet, and kids will love this recipe too!

EASY SALMON FISH CAKES

INGREDIENTS

  • 1 tin of salmon (approx 220 grams)
  • 2 cups of mashed potato (I use instant mashed potatoes)
  • 1 egg
  • 1/3 cups of breadcrumbs
  • Fresh chives (or herbs of your choice)
  • Salt & pepper to taste
  • Cornmeal
  • Oil

METHOD 

  1. Cook and mash your potatoes. Or totally cheat like me and make up some instant mash – you’ll want about 2 cups mashed.
  2. Add in your tinned salmon, egg, breadcrumbs, salt and pepper, and herbs and mix well
  3. Depending on the size of your egg, you might want to add extra breadcrumbs/potato so your mix isn’t too wet. You want to be able to roll it in your hands without being too sticky!
  4. Roll mixture into patties and coat both sides in cornmeal
  5. Place in the fridge to firm up for around 30 minutes
  6. Fry in a small amount of oil, both sides until golden brown and cooked through (approx 20 minutes)

ADDITIONAL INFO

If you don’t have cornmeal, you can always coat the patties in breadcrumbs. I love the cornmeal as it’s quite fine, but browns up nicely and adds a nice texture to the outside of the patty. Alternatively finely crushed cornflakes would work too! I

I use a healthier oil like olive oil or rice bran oil to cook these in. You only need a tiny bit when cooking in a non-stick fry pan. I prefer to go low-oil, but you could also shallow fry these for extra crunch if you preferred!

These patties are perfect served with a garden salad in summer, or fresh cooked veggies in winter. They are healthy, low fat, high in Omega-3s and are so so easy to make. Enjoy!
